Mini Chicken Pot Pies
It is a classic meal that can be easily made with the help of chicken leftovers. With low fat milk, a little amount of butter and egg whites, this delicacy contains half the sodium and fat compared to frozen varieties.
- Unsalted butter, 2 teaspoons
- Puff pastry dough, frozen, thawed, 1 sheet
- All-purpose flour, 3 tablespoons
- Fresh sage leaves, 4 in number
- Olive oil, 2 teaspoons
- Low fat milk, 2 cups
- Shredded leftover chicken, 2 cups
- Lemon juice, 2 tablespoons
- Egg white, 1 large, beaten
- Coarsely chopped leftover roasted root vegetables, 2 cups
- Salt, 1/2 teaspoon
- Fresh basil, coarsely chopped, 1/4 cup
- Pepper, 1/4 teaspoon
Take the puff pastry, roll it out to ¼ inch thickness and make four 6 inch rounds by cutting, so that they are fit for 1-cup heatproof bowls. Maintain pastry in chilled and covered condition.
In a medium saucepan, heat oil and butter in moderate heat. After adding flour, whisk continually and cook for a minute. Again constantly whisk as you add the milk slowly. Till the mixture is thickened, simmer it. Stir in chicken, lemon juice, vegetables, basil, salt and pepper. With the help of a spoon, shift the mixture to the ovenproof bowls. Take each bowl and top with pastry, while pressing against the outer portion of the bowls so that they are sealed. On the top of each pastry, keep a sage leaf, and apply egg white.
Place the pot pies over baking sheets in the oven preheated to 425 degrees. Bake them till you see a golden brown color. Serve as soon as ready.
Southwestern Chicken Roll-Ups
These roll-ups are not only packed with flavor but they also look appealing as they are served on the plate. However, the ingredients are very simple and are extremely good for the kids.
- Halved, skinless, boneless chicken breasts, 6 in number
- Low fat cream cheese, 6 tablespoons
- Cilantro sprigs, 6 in number
- Italian seasoned breadcrumbs, 6 tablespoons
- Picante sauce, 6 tablespoons
- Cooking spray
Get an oven preheated to 350 degrees.
In between two sheets of plastic wraps, position each halved chicken breast. With the help of a rolling pin or meat mallet, beat to a thickness of ¼ inch. At the top of each halved breast, place 1 tablespoon picante sauce, 1 tablespoon cheese and 1 cilantro sprig. In the manner of jelly-roll, roll them up, starting from the narrow end.
In the breadcrumbs, dredge chicken rolls. Coat a baking sheet with cooking spray and place the rolls over the sheets, with the seam sides facing downwards. Use cooking spray to coat the rolls as well. Bake for around 20 to 25 minutes or until you find that the chicken is ready.
Quick Chicken Parmesan
This is a well-known delicacy that has been an all-time family favorite. Given its popularity you might have already tried it out, but I think this article would be incomplete if I do not share it. So, here we go!
- Skinless, boneless chicken breasts, 4 in number
- Olive oil, 2 tablespoons
- Egg, 1 large
- Marinara sauce, ½ cup
- Salt, 1/8 tablespoon
- Dry breadcrumbs, ½ crumbs
- Fresh oregano, chopped, 1 tablespoon
- Parmesan cheese, finely shredded, 1 cup
- Low fat mozzarella cheese, pre-shredded, ¾ cup
Over a plastic wrap sheet, position the chicken breast with the flat side facing downwards. Take another plastic wrap sheet and cover. Beat the breast to make them 1/3-inch thick, with the help of a rolling pin or small saucepan. Take a paper towel and pat the breasts dry.
Take a bowl and in it combine oregano, Parmesan cheese and breadcrumbs. Lightly beat salt and egg in another bowl. With egg, brush the chicken breast, equally on both the sides and then apply crumb mixture for light coating.
In a heavy, large skillet, warm oil over medium to high heat. Add the chicken when the oil shimmers and cook each side for around 3 minutes, till you see a golden brown color. Over the top of each chicken breast, sprinkle mozzarella when the cooking is almost finished. In serving plates, transfer the breasts.
In the meantime, in a small saucepan or microwave, warm marinara sauce for a couple of minutes. Over each breast, place around 2 tablespoons sauce. Immediately serve.
Personal Chicken Pizzas
In order to prepare this, you can even get your kids involved if they are old enough. Plenty of veggies along with chicken make it a very healthy treat.
- Mediterranean-style flatbreads or pitas, 4 in number
- Tomato sauce, ¾ cup
- Mozzarella cheese, partly skimmed, shredded, 1 cup, divided
- Cooked chicken breast, shredded, 1 cup
- Fresh Parmesan cheese, grated, 4 teaspoons
- Selected vegetables, for creating faces
Get an oven preheated to 400 degrees. Over a baking sheet, place the pitas. On each pizza, spread tomato sauce, about 3 tablespoons.
Let you kids do the following: sprinkle 3 tablespoons shredded mozzarella, 1 teaspoon Parmesan cheese, ¼ cup chicken and then again the remaining of the mozzarella over each pita. Finally ask your kids to arrange the veggies in the form of toppings.
Bake till the bread is crisp, the cheese is melted and the pizza is heated through. Serve when ready.
